Like so many of you, we’re very invested in what’s been going on with eggs. Prices are up. Shelves are (near) empty. Grocery retailers are imposing limitations and shoppers — including us — are wondering how the people in charge are going to fix the situation and, ideally, prevent it from happening again. (Last spring’s avian flu outbreak continues to wreak havoc on the poultry population.) 

This week, we asked half a dozen shoppers and local business owners from across the country how surging egg prices are impacting their lives — and we’re shocked by some of their answers. One thing we learned: Eggs have shifted from a breakfast (and dinner) staple to a powerful economic symbol.

To ease some of the strain on our wallets, we’re baking with our favorite egg substitutes and eating egg-free breakfasts. We’re also filling our carts with some low-budget items that deliver big flavor.
